Abstract

Euscaphic acid C30H48O5 is extracted from the leaves of Gardenia, it acts as a plant metabolite. Euscaphic acid is a natural hypoglycemic product, with anti-inflammatory properties, over-regulatory activation and inhibition of inflammatory responses. Functional foods containing euscaphic acid have a nourishing effect on the body, capable of removing free radicals from the body. The extraction of euscaphic acid from the leaves of the tree leaves an opportunity for the production of functional foods in Vietnam. This paper is the result of research on extracting euscaphic acid from the tree for functional food production. Research results will be the scientific basis for application to production technology processes.
