Abstract

Modified phospholipids were synthesized by acidolysis reaction between soybean phospholipids (also known as lecithin) and conjugated linoleic acid (CLA) using phosphlipase A1 as a catalyst. The reactions were carried out for 48h in a solvent-free or organic solvent systems. The fatty acid composition of lecithin, modified lecithin, PC and PE was analyzed by gas chromatography. After 48 h of reaction, the highest content of CLA incorporated into lecithin was 64.27 mol% in free-solvent system.
